I love chocolate, brownies, cakes, muffins and just about every other baked good that you can image. I've heard a lot of talk about the King Arthur's Flour, but I had yet to see it in my local stores.

That all changed on my Saturday shopping trip! Right away, I grabbed the gluten free muffin mix, a cartoon of eggs, and a box of blueberries, and I couldn't wait to make them!

The recipe could not be easier, you simply mix all of the ingredients together and bake for 18 - 20 minutes. Then enjoy! :)

We choose a restaurant in the city each month that we visit and get to know each other and enjoy a gluten free meal together. Many restaurants get a small group or a couple of gluten free diners each month.

Imagine booking a reservation of 30 - 40 gluten free diners in one night! Think of the impact that we can have on restaurants in New York and around the world.

What do you think? If you're interested...e-mail me at info@glutenfreelifestylecoach.com, and I will put together a list of individuals!Jenna Drewhttp://www.blogger.com/profile/08185866126147767824noreply@blogger.com0tag:blogger.com,1999:blog-2760781712700896398.post-42895380687364367872010-08-18T13:41:00.000-07:002010-08-18T13:41:04.495-07:00Gluten Free Jenna is Moving...Again!Yes, the rumors are true. I am moving once again this year. For those of you who may have followed me for a while now, it's ok, I allow you to roll your eyes!

I am a young woman on a mission, and I am open to relocation to follow my dreams and my desires. Even if it means re-packing all of my belongs and driving about 7 hours in a car.

Over the past year, I have moved a total of 5 times:

1. Penn State/ State College, Pennsylvania
2. New York City
3. Indiana, Pennsylvania (My hometown)
4. Butler, Pennsylvania
5. Pittsburgh, Pennsylvania

This will make move number 6...drum roll please...A return to the Big Apple, New York City!

From my gluten free blogging endeavors, I know there are a lot of gluten freebies in the Big City, and I would love meet some of you! If you'd be interested in getting together in New York City or Northern NJ, send me an e-mail at jenna@glutenfreelifestylecoach.com. (Note...I won't officially be moved in until the middle of September...so we may have to wait until October to meet.)

I will be starting my MBA program this fall as well as offering gluten free classes and coaching both online and in-person (more details to come very very soon)!Jenna Drewhttp://www.blogger.com/profile/08185866126147767824noreply@blogger.com1tag:blogger.com,1999:blog-2760781712700896398.post-46776379063254127672010-05-16T05:53:00.000-07:002010-05-16T05:54:39.617-07:00A Night in Paris - Paris 66Last night, we dined at La Paris 66 in Shadyside. I’ve been wanted to go there for a while now to try their gluten-free options! When we walked in, we were greeted by a friendly “bon soiree” by the owner and led to a quaint table on the back patio under the festive lights. The mood wasn’t stuffy or pretentious at all – simply a relaxed South of France atmosphere.

The restaurant was BYOB, so we brought our own bottle of red, Spanish Tempranillo/Shiraz mix (yes, I know what you're thinking...Spanish wine to a French restaurant). After it was corked, we made our first ‘chin chin’ to travelling to France in one year’s time.

Our first course was a shared La Paris 66 galatte, made from buckwheat and filled to the brim with ham, cheese and a sunny-side-up egg with mushrooms, tomatoes and salad on the side. It was absolutely delicious and reminded me of the months I spent in France.

My next course was the evening’s special, roasted lamb with potatoes and bacon-wrapped green beans (he had me at bacon). Now, before I ordered, I told the waiter of my gluten intolerance and he went to speak with the French chef. When the waiter returned, he said the potatoes on the side were not gluten-free, but the chef would be happy to prepare something else that would be gluten-free. The chef specially made me a second side of pablano peppers stuffed with a rice and rosemary blend which was more amazing than the original side. I had forgotten the aromatic and complexity of French meals!

We finished the meal with a shared a chocolate mousse made with 65% Belgian chocolate. I felt as though with each bite, I was dipping my spoon into the most delicious dark chocolate bar I had ever tasted.

Thank you Paris 66 for the fabulous tastes of France right here in Pittsburgh, PA.Jenna Drewhttp://www.blogger.com/profile/08185866126147767824noreply@blogger.com0tag:blogger.com,1999:blog-2760781712700896398.post-46671126376472864862010-05-09T13:22:00.000-07:002010-05-11T03:46:28.527-07:00Mother's Day Cake

On Mother's Day, I was in charge of making the gluten free dessert. So, naturally I went for a Betty Crocker Devils Cake. I was feeling a little decorative after watching an episode of Cake Boss, and I added an extra flair with some strawberries.

Not the prettiest job icing, but it's an attempt. My favorite part is the strawberry flower in the middle. I'll tell you how it tastes soon!Jenna Drewhttp://www.blogger.com/profile/08185866126147767824noreply@blogger.com0tag:blogger.com,1999:blog-2760781712700896398.post-50359745257541203512010-02-07T09:19:00.000-08:002010-02-07T09:19:09.964-08:00All You Need Is...
All You Need Is <strike>Love</strike> Nutella.

Snacking can be hard when you're on a Gluten Free diet. You always have to watch out for those "hidden" ingredients. Today, I'm eating not only a delicious snack but one that takes me back to my months spent in the South of France.

In France, people don't eat peanut butter. They eat Nutella - a "creamy, chocolaty hazelnut spread"(TM). In my opinion, Nutella tastes great on just about anything. Before you try anything crazy though, I recommend spreading a dollup on Blue Diamond Almond Nut Thins. The combination of flavors tastes great!

A dear friend of her, Christina, gave her this message. Her niece Amber is 13 years old. She has been fighting a severe brain disease for the past 12 years. Amber has been life flighted 110 times and has been in 17 commas. She is coming to the end of the road. There is nothing more they can do for her. They are now saying that she probably won't make it until next Christmas. One of her favorite things is getting mail. Christina and Ambers mother are trying to spread the word to see how many cards or letters Amber can get from different states and countries.. To read more about her please visit http://prayernet.geisinger.org/ name code damo56..

Please if you have just a moment in your day...send her a card of encouragement. And the little time it took you to read this email you could in return send this letter to everyone you know. Her address is Amber Dougherty, 2766 Bald Eagle Pike, Tyrone, Pa., 16686.

If this were your child or family member I'm sure you would encourage this as much as you were able. I do not personally know Amber but i think that every ounce of encouragement and happiness we can bring to Amber will help her with the time she has left on this earth.
Please pass this along. Thank you.Jenna Drewhttp://www.blogger.com/profile/08185866126147767824noreply@blogger.com1tag:blogger.com,1999:blog-2760781712700896398.post-84168858050264354532009-12-21T13:54:00.000-08:002010-01-29T20:46:15.695-08:00Making Gluten Free Pizza on a Grill

Alright I know it's cold outside, but I have to share this AMAZING recipe with you! It tastes exactly like brick oven pizza -- and it's 100% gluten free!

Ingredients:
Chebe Cheesy Gluten-Free Bread Mix
GF Tomato Sauce of Your Choice (I really like Bertolli's Organic Sauce!)
Provolone Cheese (1 Pack)
1 Organic Green Pepper
Boar's Head Pepperoni
(Feel free to use any toppings of your choice!)

Preparation:
First, prepare the pizza dough as listed on the Chebe Bread Package. (I've noticed that I like making Pizza with the Bread, but Chebe also has a Chebe Gluten-Free Pizza Crust Mix.)

Spread the pizza dough out on a large piece of aluminum foil until it is in your desired shape (round, square, oval...or be creative!)

Then, place the pizza dough upside down on the grill, so the top side of the pizza gets nice and toasty. (Make sure to move the pizza around the grill, so it does not stick.) After about 10 minutes, flip the pizza over and add your chosen pizza sauce. Next, add cheese slices equally around the pizza dough and follow with other various toppings. Cook the pizza approximately 15-20 minutes, depending on the heat of your grill.

Remove the tin foil, and enjoy you're wonderful pizza!

**Tip: Make sure to oil the foil before spreading out the dough, so it doesn't stick!Jenna Drewhttp://www.blogger.com/profile/08185866126147767824noreply@blogger.com2tag:blogger.com,1999:blog-2760781712700896398.post-30886576621966441122009-12-01T09:15:00.000-08:002009-12-01T10:05:28.098-08:00October Celiac Awareness Dinner SuccessThis post has been a long time in the making! First of all, I would like to thank all of you who came out to Benjamin's Restaurant to be an advocate for Celiac Awareness! We wouldn't have raised the funds needed for a certified Gluten-Free restaurant without you! I would like to give another very special thank you to Patty and Julie Anne of Sisters Three Gluten Free (www.SistersThreeGlutenFree.com)for providing delicious gluten free bread for our meal! Finally, I would like to thank Chef Regis McGill for taking care of our gluten free needs and preparing a wonderful meal!

Our meal began with a fresh greens salad. Attendees had a choice of three gluten free dinner entrees: Cedar Plank Salmon, Chicken Lafayette, and Pork Othello. I choose the Chicken Lafayette which practically melted in my mouth! Up to 12 contestants will compete in the March event, with the winner moving on to compete for the Miss International title in Chicago.

The winner in Chicago gets to work for a year promoting their platform.

Celiac disease affects 3 million people in the United States, Jenna said. It's the most common disease in the world, but she said 97 percent of people who have it don't know it.

People with the disease can't have wheat, rye, barley and sometimes oats, Denise said. With the digestive disease, the lining of the small intestine is damaged or destroyed by gluten, resulting in malnutrition.

For this reason, it's hard to dine out, said Jenna. Many restaurants don't offer gluten-free food, and she and her mother have to question the waiter or waitress about ingredients and how the food was prepared.

Denise calls it ``dying out'' instead of dining out because if her food was exposed to gluten, or someone was wrong about ingredients, it is a painful mistake for her.

``We just want it to be easier in Indiana to go out to eat,'' Jenna said. She hopes to bring awareness to her issue first locally, then at state and national levels.

To bring awareness about these issues, Jenna will host an event at the Pittsburgh Pirates game Sept. 27 at PNC Park. There will be a gluten-free tailgate party before the game and on-field recognition of Jenna's cause.

She has partnered with The Gluten Intolerance Group and the National Foundation for Celiac Awareness for her platform and events.

A portion of the ticket sales will benefit the groups.

Locally, there will be an event at Benjamin's, one of a few restaurants in the Indiana area to cater to those who cannot have gluten, Jenna said. The event is at 5:30 p.m. Oct. 16, and 40 tickets will be available. A gluten-free menu will be offered. For more information, visit Jenna's blog at www.missindianapainternational.blogspot.com.

Jenna's selection as Miss Indiana International 2010 was in part based on her education. A recent graduate of Penn State, Jenna majored in advertising, French and international studies, with a minor in international arts.

``I was a little bit of an overachiever,'' Jenna said.

She also completed three internships and studied abroad in France. She also worked for the Daily Collegian. She is looking into going to law school next fall.

She is a fifth-generation graduate of Indiana Area High School.

Jenna believes that pageants sometimes get a stigma. But after participating, she disagrees.

``It really helps you gain confidence,'' she said.

-------------------------------------------------------------------

**The Dinner will be held on Saturday, October 17. The Miss International Pageant system is for women 19-29 from all around the globe, and it is dedicated to promote women and their life accomplishments.

The Miss Pennsylvania International Pageant allows women of Pennsylvania the opportunity to support a personally chosen platform and to become a positive role model in her community. In March 2010, I will represent Indiana, PA in Altoona for the title of Miss Pennsylvania International.

The Mission of the Miss International Pageant is “To Make a Difference.”

For more information:

Miss Pennsylvania International Pageant, click here.
Miss International Pageant, click here.Jenna Drewhttp://www.blogger.com/profile/08185866126147767824noreply@blogger.com0tag:blogger.com,1999:blog-2760781712700896398.post-15209707815122338002009-07-18T19:32:00.000-07:002009-07-18T20:01:24.252-07:00Tips For Cooking Gluten-Free by Lisa LundyCooking gluten-free can be intimidating at first.
